Breakfast Burrito

a warm, handheld wrap filled with classic morning staples like eggs, sausage or bacon, cheese, and veggies, all tucked inside a soft tortilla. It’s hearty, flavorful, and packed with protein and carbs to give you lasting energy to power through the day.

Ingredients
  

  • 4 eggs
  • salt & pepper to taste
  • ¼ tsp smoked paprika
  • ½ lb sausage (your favorite breakfast sausage)
  • 1 cup Monterey jack (or whatever your cheese preference is)
  • 4 large flour tortillas
  • 1 avocado diced
  • 1 small Roma tomato diced
  • a squeeze of lime juice
  • fresh cilantro optional

Method
 

  1. In a skillet over medium heat, cook sausage until browned. Remove from pan and set aside.
  2. In a bowl, whisk eggs with paprika, salt, and pepper. Pour into the same pan and scramble until just set. Remove from heat.
  3. In a small bowl, mix avocado, tomato, lime juice, and cilantro (if using).
  4. Lay out tortillas. Add a spoonful of sausage, scrambled eggs, cheese, and a little avocado-tomato salsa.
  5. Fold in the sides and roll tightly. Place seam side down in a lightly oiled skillet. Cook 2–3 minutes per side until golden and the cheese melts.
  6. perfect with hot sauce or extra salsa on the side.

Notes

Make-Ahead Tip: Wrap extra burritos in foil and refrigerate. Reheat in the oven at 350°F for about 15 minutes.
