Comforting Mac & Cheese

A truly satisfying and comforting dish.

Ingredients
  

  • 8 oz Elbow macaroni or any pasta you like
  • 2 tbsp Butter
  • 2 tbsp All-purpose flour
  • 2 cups Milk whole milk preferred, but any kind works
  • ½ cup Mozzarella or Monterey Jack cheese shredded
  • 1 tsp Garlic powder
  • ½ tsp Paprika
  • Salt and pepper to taste

Method
 

  1. Cook pasta in salted water until al dente. Drain and set aside.
  2. In a saucepan, melt butter over medium heat. Add flour and whisk continuously for about 1–2 minutes (until it smells slightly nutty). This is your base!
  3. Gradually whisk in the milk to avoid lumps. Let it simmer until it thickens (about 4–5 minutes). Stir often!
  4. Turn the heat to low and add the shredded cheese. Stir until it’s completely melted and silky. Season with salt, pepper, and any optional spices.
  5. Add your cooked pasta to the cheese sauce. Mix until every piece is coated and gooey. Taste and adjust seasoning.
  6. Optional step: Pour into an oven-safe dish, top with breadcrumbs or extra cheese, and broil for 2–3 minutes for a crispy topping.

Notes
