Method
- Cook pasta in salted water until al dente. Drain and set aside.
- In a saucepan, melt butter over medium heat. Add flour and whisk continuously for about 1–2 minutes (until it smells slightly nutty). This is your base!
- Gradually whisk in the milk to avoid lumps. Let it simmer until it thickens (about 4–5 minutes). Stir often!
- Turn the heat to low and add the shredded cheese. Stir until it’s completely melted and silky. Season with salt, pepper, and any optional spices.
- Add your cooked pasta to the cheese sauce. Mix until every piece is coated and gooey. Taste and adjust seasoning.
- Optional step: Pour into an oven-safe dish, top with breadcrumbs or extra cheese, and broil for 2–3 minutes for a crispy topping.
