Method
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl or large measuring cup, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined—don’t overmix! It’s okay if it’s a little lumpy.
- Gently fold in the blueberries.
- Heat a nonstick skillet or griddle over medium heat. Add a bit of butter or oil.Pour about 1/4 cup of batter per pancake. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook another 1–2 minutes until golden brown and cooked through.
- Serve warm.
