Pumpkin Spice French Toast

Pumpkin Spice French Toast is the ultimate fall breakfast—thick slices of bread dipped in a creamy pumpkin-spiced custard, pan-fried until golden, and finished with a drizzle of maple syrup. Warm, cozy, and perfectly spiced, it’s like autumn on a plate.

Ingredients
  

  • 4 slices of thick bread (I love brioche or challah)
  • ½ cup pumpkin puree
  • 2 large eggs
  • ¼ cup milk
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • ¼ tsp cinnamon
  • pinch of salt
  • butter or oil for frying
For Serving
  • maple syrup
  • powdered sugar
  • fresh fruit (I love all berries)

Method
 

  1. In a shallow bowl, whisk together the pumpkin puree, eggs, milk, vanilla extract, pumpkin pie spice, cinnamon, and salt until smooth.
  2. Preheat a skillet over medium heat and melt a little butter or oil.
  3. Dip each slice of bread into the pumpkin mixture, making sure it’s fully coated.
  4. Cook each slice for 3–4 minutes per side until golden brown and slightly crisp.
  5. Serve warm with maple syrup, a sprinkle of powdered sugar, or your favorite fresh fruit.

Notes

A Few Personal Touches:
I love adding chopped pecans or walnuts for a little crunch, or a drizzle of caramel if I’m feeling indulgent.  Add in a cup of your favorite seasonal tea or coffee and the morning feels complete.
