Steak Tips

Herb-seasoned steak with a golden crust and tender center.

Ingredients
  

  • 1 lb sirloin steak tips (or ribeye tips) cut into bite-sized pieces
  • 2 tbsp olive oil
  • 3 garlic cloves minced
  • 1 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ dried thyme
  • ½ tsp dried rosemary crushed between fingers
  • 1 tbsp butter for finishing

Method
 

  1. In a bowl, toss the steak tips with olive oil, garlic, salt, pepper, smoked paprika, garlic powder, onion powder, thyme, rosemary, and red pepper flakes. Make sure every piece is coated evenly. Let marinate for at least 15–20 minutes (or up to 2 hours in the fridge for deeper flavor).
  2. Heat a cast-iron skillet over medium-high heat until very hot. Add the steak tips in a single layer (work in batches if needed—don’t overcrowd the pan).
  3. Let them sear undisturbed for 2–3 minutes before flipping. You want a deep brown crust. Cook another 2–3 minutes until medium-rare to medium, depending on preference.
  4. Lower heat slightly and add the butter. Toss the steak tips in the melted butter for 30–60 seconds for extra richness.
  5. Remove from heat and let rest for 3–5 minutes before serving.
