Easy Recipes for a Perfect Spring Picnic

Iโ€™m so happy itโ€™s spring. The transition from winter to spring was soft and fluid. Here in Los Angeles, itโ€™s typically always hot, but still, you notice the little changes in the environment. For me, springtime makes me feel more eager, more encouraged, and more ready for whatever lies ahead. Itโ€™s a season of rebirthโ€”a time to embrace the seasonโ€™s offerings: sunny days, warmer evenings, and most of all, food.

Getting Outside

Personally, springtime makes me want to get out of the house more and go outside. I noticed the other day while walking my dog just how nice it is to be outdoors. The scent of jasmine and magnolia blossoms filling the air. The feel of the sun warming my skin and the cool breezes that brush past you. Itโ€™s not only beautiful, but also therapeutic. Every time I step outside, Iโ€™m reminded just how precious the little things in life can be.

Seasonal Cooking Inspiration

What I enjoy most is cooking up fresh seasonal ingredients. Artichokes, asparagus, avocados, strawberriesโ€”theyโ€™re all ready to be creatively incorporated into a new or classic springtime dish. I get so excited whenever I go to a local farmers market to pick up some of these items. Itโ€™s a wonderful outdoor activity, browsing around each stand filled with local favoritesโ€”honey, jam, veggies, fruits, the whole nine. Then going back home and cooking up a meal worthy of celebrating spring.

Spring Picnic Memories

But growing up, my favorite activity was going out on a picnic. I remember going often with my mom to picnics at the park. Weโ€™d often go to Lake Balboa, a beautiful, scenic, serene spot right in the heart of the San Fernando Valley. My mom would make tuna salad sandwiches, cut up fresh slices of watermelon or strawberries, pack some BBQ chips, homemade potato salad, and chocolate chip cookies for a sweet treat.

I remember setting up a spot right by the lake. Weโ€™d come preparedโ€”a picnic basket, thermoses filled with lemonade, plates, and utensilsโ€”and it always worked out perfectly. Usually, Iโ€™d either bring my bike or my Rollerblade’s and zoom around the park. But the best part was always the picnic itself. We dug into the food, chatted, laughed, and created wonderful memories. Iโ€™ll always hold those moments in a special place in my heart.

There were also memories of picnicking at the beach, a personal favorite of mine. Thereโ€™s nothing like sitting on a beach blanket underneath an umbrella, gazing at the ocean, smelling that salty, sweet air, and noshing on a tuna salad sandwich. Itโ€™s so nostalgic to me. Most of the time, it isnโ€™t hot enough to go to the beach in spring, but once again, Southern California is unpredictable with its weather. I mean, itโ€™s already in the triple digits, so the beach sounds intriguing.

Potato Salad: A Family Favorite

Picnics are the perfect way to welcome spring. I suggest getting outside and going on a little venture somewhere scenic. I also suggest making a personal family favorite of mine to accompany your lunch: potato salad.

This recipe is not only nostalgic, but also delicious. Every springtime, I make it. Most of the time, I bring it on a picnic or make it for outdoor BBQs. Itโ€™s the perfect accompaniment to almost anything.

Itโ€™s creamy, tangy, and comforting in the best way possible. For me, itโ€™s more than just a salad. Itโ€™s a reminder of family and cherished memories. Every time I make it, I feel my grandma guiding me, adding that extra stitch of love. The colors, smells, and sounds all coming together feel like stepping back in time and reliving those memories.

Grandma’s Potato Salad

Embrace The Unseen
A creamy, tangy potato salad thatโ€™s simple, comforting, and perfect for picnics, BBQs, or any springtime meal.
Course Salad, Side Dish

Ingredients
  

For the Salad

  • 2-3 russet potatoes or yellow potatoes, boiled, cooled, and chopped into 1-inch cubes
  • 2 celery stalks chopped
  • 2 green onions chopped
  • 2 tbsp hamburger dill pickles chopped (reserve some pickle juice for the dressing)
  • 4-6 hard boiled eggs chop 3โ€“4 for the salad, save the remaining 2 for garnish

For the Dressing

  • ยฝ cup mayonnaise
  • ยฝ cup sour cream
  • 1-2 tbsp yellow mustard
  • 2 tbsp reserved pickle juice
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions
 

  • Boil the potatoes in salted water until tender. Cool completely, then chop into cubes.
  • Boil the eggs, peel, chop 3โ€“4, and reserve the rest for topping.
  • Combine potatoes, celery, green onions, pickles, and chopped eggs in a large bowl.
  • Mix the dressing ingredients and gently toss with the potato mixture.
  • Chill for at least 1 hour. Garnish with reserved eggs before packing. Just cut them into halves and place them on top of the salad. For a pretty presentation, sprinkle a little more paprika.

Notes

I suggest tasting the dressing before mixing it into the salad so you can make necessary adjustments if need be. ย 
You can also use more or less of the veggies depending on your personal preference.ย

Other Easy Picnic Classics

Tuna Salad Sandwiches

Simple, satisfying, and always a crowd-pleaser. I loved sneaking little tastes while assembling them, imagining the beach or park where Iโ€™d eat them.

Ingredients

  • 1 can tuna, drained
  • 2โ€“3 tablespoons mayonnaise
  • 1 teaspoon mustard
  • 1 celery stalk, finely chopped
  • chopped red onion (if desired)
  • Salt and pepper to taste
  • Bread or rolls

Mix the tuna, mayo, mustard, celery, onion, salt, and pepper. Spread on bread or rolls, wrap, and pack for your picnic.


Watermelon Wedges

Nothing says spring like biting into a juicy, refreshing slice of watermelon. I remember feeling the juice dripping down my chin–classic.

Tip:ย Pack in a cooler or insulated bag for the perfect refreshing bite.


Fresh-Baked Chocolate Chip Cookies

No picnic feels complete without a sweet treat. Thereโ€™s something about biting into a familiar, comforting cookie outdoors that makes the day feel extra special.

Quick Memory Recipe

  • Use your favorite chocolate chip cookie recipe (or store-bought if pressed for time!)
  • Bake or prep the night before
  • Wrap individually or place in a tin for easy packing
  • Bonus: Eating one under the sun makes it taste like pure nostalgia

  • Pick a Comfortable Spot:ย Parks, beaches, or even your backyard can be perfect. Bring blankets or a picnic mat.
  • Prep in Advance:ย Make your potato salad and sandwiches the night before to enjoy a stress-free morning.

  • Bring the Extras:ย Napkins, plates, utensils, and a small cooler to keep drinks and salads chilled.

A Personal Reminder

For me, sitting on a blanket with my family, passing around my grandmaโ€™s potato salad, always made me feel connected to both them and the wonderful childhood I had. So, take a day to be with family or friends, get outdoors, and enjoy a picnic that tastes a little like home.
