Pot Roast

Pot roast is a slow-cooked, melt-in-your-mouth dish featuring tender beef, hearty vegetables, and rich savory juices—deeply comforting and full of nostalgic, home-cooked flavor.

Ingredients
  

  • 2-3 lb chuck roast
  • salt and pepper
  • 1 onion chopped
  • 3-4 garlic cloves minced
  • 3-4 carrots peeled and chopped
  • 3-4 celery stalks chopped
  • 3-4 small potatoes halved
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 French onion sup seasoning packet
  • 1 tsp fresh thyme a few sprigs
  • 1 tsp fresh rosemary a few sprigs
  • green beans optional as a side

Equipment

  • 1 Dutch Oven or slow cooker

Method
 

  1. Preheat oven to 275°F. Season your roast generously with salt and pepper.
  2. Sear the roast in olive oil until browned on all sides. Remove and set aside.
  3. Sauté onions, celery, and garlic until fragrant, then add carrots and potatoes.
  4. Place roast back in, pour in broth, French onion soup seasoning packet, Worcestershire, and place in the herbs.
  5. Cover tightly and cook in the oven for 3.5 to 4 hours, until it’s fork-tender.
  6. Serve with creamy mashed potatoes and tender green beans. Breathe in the comfort.
