A Pot Roast Kind of Love

When I think about the food that feels like home, my mind drifts to one thing: pot roast.  Itโ€™s more than just a meal, itโ€™s a memory.  Itโ€™s a feeling of ultimate comfort that rests deeply within my bones. 

Growing my mom used to make it at least once a month, and usually for a Sunday dinner. I just vividly remember the ease of watching her cook it.  The way sheโ€™d baste it with all its glorious juices.  The aromas filling the house, and the savory flavors that lingered on my palate for hours.  Itโ€™s pure nostalgia for me.  

It brings forth feelings of a chilly fall night, or just precious memories created over good food and good company. The feeling of a chilly fall night.  A meal that can heal anyoneโ€™s aching soul.  

This dish just so happens to shout love from every corner.  I now make it for myself, and though itโ€™ll never quite be like my moms, itโ€™s dang close.  I like to use a Dutch oven because you can soften the vegetables, sear the meat, and scrape the pan and all its lusciousness in one pot.

The best part about it is that the prep time is a breeze and the cooking does itself. Itโ€™s truly a sight to behold when it comes out of the oven, and the tender meat falls apart to the touch. 

For me, when the world feels too loud or too much and my heart is heavy, this meal brings me home.  It brings me back to myself and makes me feel Iโ€™m embraced in a warm hug.  Itโ€™s love, comfort, and fullness all wrapped up into one beautiful dish.  It never fails to feel like a homecoming. 

Food isn’t just sustenance sometimes. It’s a memory unfolding. It hold you together when you feel like you’re falling apart. This pot roast is that for me. It’s a reminder that comfort can be simple, and that home can be something you create for yourself.

Pot Roast

Pot roast is a slow-cooked, melt-in-your-mouth dish featuring tender beef, hearty vegetables, and rich savory juicesโ€”deeply comforting and full of nostalgic, home-cooked flavor.
Course: Main Course
Cuisine: American

Ingredients
  

  • 2-3 lb chuck roast
  • salt and pepper
  • 1 onion chopped
  • 3-4 garlic cloves minced
  • 3-4 carrots peeled and chopped
  • 3-4 celery stalks chopped
  • 3-4 small potatoes halved
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 French onion sup seasoning packet
  • 1 tsp fresh thyme a few sprigs
  • 1 tsp fresh rosemary a few sprigs
  • green beans optional as a side

Equipment

  • 1 Dutch Oven or slow cooker

Method
 

  1. Preheat oven to 275ยฐF. Season your roast generously with salt and pepper.
  2. Sear the roast in olive oil until browned on all sides. Remove and set aside.
  3. Sautรฉ onions, celery, and garlic until fragrant, then add carrots and potatoes.
  4. Place roast back in, pour in broth, French onion soup seasoning packet, Worcestershire, and place in the herbs.
  5. Cover tightly and cook in the oven for 3.5 to 4 hours, until itโ€™s fork-tender.
  6. Serve with creamy mashed potatoes and tender green beans. Breathe in the comfort.
