When All Else Fails, Make the Cookie

There’s nothing like a warm chocolate chip cookie to make life feel a little less heavy.  

Lately, I’ve been craving sweets more than usual.  I’m honestly more of a savory kind of gal.  Give me a slice of cheesy pizza or a salty snack and I’m happy.  But when things feel overwhelming and my brain just won’t quiet down, I turn to dessert to help me get through some tough times.

And cookies? They’re my go-to over cake every time.  It’s the kind of dessert that feels more accessible when everything else feels out of reach.  

Baking as Therapy 

Baking has always been something that I enjoy doing.  It’s methodical but creative.  It’s messy, but full of love.  It invites me to slow down.  And as someone who struggles with impatience, that’s saying something.  

I’ve realized I return to the kitchen when I need a break from my own thoughts.  Measuring ingredients gives me something to focus on when my mind feels loud.  Mixing dough with my hands, smelling vanilla and brown sugar—it all pulls me back to the present. 

The Skillet Cookie

I recently tried a new recipe inspired by one of my favorite restaurant desserts—the deep-dish chocolate chip cookie form BJ’s.  I remember going there often with friends, enjoying a hot slice of pizza and a warm gooey desert.  It felt like a reward after a long day of work.  

There’s something wonderful about the way the cookie turns out—golden and crisp around the edges, soft and gooey in the middle.  It’s rustic and deeply comforting.  Everything you could want in a dessert.  Especially when you need a little extra care.  

Trying it Out

I made it on a whim.  I had a real hankering for it, so I fed into the craving.  All I wanted was to throw on a light-hearted movie, get cozy in bed, and indulge in a warm skillet cookie topped with a generous scoop of vanilla ice cream. 

You’ve got to have the vanilla ice cream with it.  It’s non-negotiable.  The way the cold cream melts into the warm cookie.  I’m drooling just thinking about it.  Making this skillet cookie felt like an act of self-kindness.  A love letter to the part of me that’s still healing.

Skillet Chocolate Chip Cookie

Warm, gooey, and golden around the edges, this skillet chocolate chip cookie is pure comfort in dessert form. Baked in a cast iron pan for that perfect crisp-meets-soft texture, it’s rich with melty chocolate, brown sugar warmth, and a hint of vanilla. Best served straight from the oven with a generous scoop of vanilla ice cream on top—it’s simple, nostalgic, and exactly what you need when the day calls for something sweet, soothing, and soul-hugging.

Ingredients
  

  • cups all-purpose flour
  • 2 tsps baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter
  • 1 cup packed brown sugar
  • ½ cup sugar
  • 1 large egg
  • 2 large egg yolks
  • 3 tsps vanilla extract
  • 10 oz chocolate chips milk or semi-sweet, your choice!
  • flaked salt for topping

Equipment

  • 1 large cast-iron skillet

Method
 

  1. · Preheat the oven to 350 degrees F.
  2. · In a bowl, whisk together the flour, baking powder, soda, and salt.
  3. Heat the 12-inch skillet over low heat. Let the skillet heat up for 5 minutes. Add the butter and let it melt completely. Stir in the sugars with a wooden spoon. Turn off the heat under the skillet. You MUST turn off the heat! You can also remove the skillet from the burner if you wish. 
  4. Whisk together the egg and egg yolks in a bowl. Add it to the skillet sugar mixture and mix in right away with a spoon, quickly mixing so the eggs don’t cook from the heat. Stir in the vanilla extract.
  5. Stir in the dry ingredients until just combined. This will take a minute or two and the mixture will be thick, but they will mix in! You can wipe the top of the skillet or the sides with a damp paper towel to remove excess flour.
  6. Stir in the chocolate chips. Bake the skillet cook for 20 to 25 minutes, or until it’s mostly set in the center. Top with flaked sea salt.
  7. Serve warm with vanilla ice cream.

Treat Yourself

Sometimes, the best kind of self-care doesn’t come in the form of a perfect routine or a profound realization.  Sometimes, it’s simply letting yourself be.

It’s listening to your body, honoring the craving, and giving yourself permission to soften.  To take a pause.  To make the cookie.

Because even in the messiest moments, you deserve warmth.  You deserve comfort.
You deserve sweetness—especially from yourself.

So go ahead—preheat the oven, scoop the dough, and don’t forget the ice cream.  You’re not just baking a dessert.  You’re showing up for yourself in the most tender way. And that, in itself, is enough.
