Fall in Love with Pumpkin French Toast
Fall is officially here, and I’m beyond elated. My favorite holiday, Halloween, is almost upon us, and I can’t wait to partake in the festivities—pumpkin patches, hayrides, and ghostly adventures. But what excites me most about the holiday is the fun, creative ways to make some sweet treats. It’s the time of year where the kitchen gets that magical feeling. I really like to get into the spirit by playing some spooky tunes, lighting some scented candles, and pulling out my hand mixer.
Growing up, I was never a fan of pumpkin as food. I used to bask in the smell when I’d carve them, but the flavor and texture threw me off a bit. Now as I’ve grown older, and after trying numerous pumpkin spiced breads, cupcakes, and coffee drinks, I take in the beauty of the seasonal flavor. To me, pumpkins equal the whole holiday season, and it’s not complete without them.
Lately, I’ve been craving French toast. My mom used to make it for me all of the time when I was a kid. She used to tell me stories of her dad making it for her, and how he’d always use a little bit of cinnamon and nutmeg into the batter. I know a lot of people make it that way, but it feels extra special to me because of the family connection.
I remember going to IHOP for breakfast often, and I’d always order their French toast with a hot cup of chamomile tea. I’d also order a side of hashbrowns because I was a carb queen my whole life. But going there practically every weekend with my parents is pure nostalgia. It’s in the simple, memorable moments where I find the most joy.
Last year, I decided to try and spice things up a bit and make a more seasonal French toast by adding pumpkin into the mix. The flavors, the aroma, the texture, all made me feel so cozy inside. And when it comes to breakfast, I want to savor every bit of fall while I can. Besides, it only comes around once a year, might as well make the most of it.

- In a shallow bowl, whisk together the pumpkin puree, eggs, milk, vanilla extract, pumpkin pie spice, cinnamon, and salt until smooth.
- Preheat a skillet over medium heat and melt a little butter or oil.
- Dip each slice of bread into the pumpkin mixture, making sure it’s fully coated.
- Cook each slice for 3–4 minutes per side until golden brown and slightly crisp.
- Serve warm with maple syrup, a sprinkle of powdered sugar, or your favorite fresh fruit.
Notes
I love adding chopped pecans or walnuts for a little crunch, or a drizzle of caramel if I’m feeling indulgent. Add in a cup of your favorite seasonal tea or coffee and the morning feels complete.
