Why My Favorite Panini Makes Me Feel at Home

What snack would you eat right now?

Lately, I’ve been craving my favorite chicken pesto panini from Il Tramezzino, an Italian café known specifically for this sandwich. It might not technically be a snack, but it’s something I’m always craving.

Imagine freshly baked ciabatta bread, a generous layer of their famous basil pesto, vibrant sun-dried tomatoes, sliced avocado, beautifully seasoned chicken, and melted provolone cheese, pressed down to perfection.

I remember going there quite frequently with my mom for lunch dates. She fell in love with the panini just as much as I did, so we’d often share. I’d always be in the mood for a fresh iced tea — it just speaks lunch. And for dessert? You bet I’m getting their signature chocolate cannoli imported from Milan.

Honestly, nothing makes me happier than small Italian cafés. I’m obsessed with all things Italian, so whenever I’m immersed in the food, I feel a release of something extra — serotonin, comfort, joy. I feel genuinely happy. I feel at ease.

Food does that to you. When you take a bite of something that literally makes your eyes roll in delight, you know it’s special. A memory is created, and those small moments can be some of the most healing ones.

I like going to familiar places, especially Il Tramezzino. I know what I want to order. The layout of the restaurant. And I know the friendly staff. There’s a comfort there that I’m always searching for when I’m out in public.

The happiness I feel releases all the tension I’ve been holding in. My shoulders relax. My mind focuses on savoring the flavors, the atmosphere, and the company I’m with. I feel lighter — like I’m finally able to release my emotions in a positive way.

So, I wanted to recreate this recipe because I love it so much. I want to Bring that same feeling of joy and comfort into my home. It’s nostalgic. It’s grounding. And It’s something I’m always yearning for.

The Chicken Special Panini

A simple yet soul-soothing chicken pesto panini layered with basil pesto, seasoned chicken, sun-dried tomatoes, avocado, and melted provolone on warm ciabatta. It's familiar, grounding, and full of comfort.
Course Lunch
Servings 2 panini’s

Equipment

  • Panini Press or a skillet

Ingredients
  

For the Basil Pesto

  • 1 cup fresh basil leaves
  • 1 garlic clove
  • ½ cup good quality mayonnaise
  • sea salt and pepper to taste
  • 3 tbsp olive oil

For the Panini

  • 1 boneless skinless chicken breast
  • ¼ cup oil packed sun-dried tomatoes drained and sliced
  • ½ avocado thinly sliced
  • 2 slices Provolone cheese
  • Ciabatta bread
  • 3 tbsp olive oil

Instructions
 

  • In a food processor or blender, drop in garlic to finely chop. Add in basil, mayo, salt, and pepper and pulse until well combined. Place in a large bowl and let sit at least 20 minutes.
  • Preheat a skillet over medium high heat. Lightly drizzle extra virgin olive oil and salt and pepper on both sides of the chicken breast.
  • Grill chicken until cooked through, about 10 minutes per side.
  • Transfer to cutting board and rest and then slice into ¼ inch pieces
  • Cut Ciabatta loaf in half and then again horizontally. Spread about a tbsp of basil aioli onto each of the 4 bread halves. Add a layer of chicken to each bottom slice, then add sun-dried tomatoes, avocado, and top with provolone cheese. Place bread top on and squash down slightly.
  • Grill in a panini press until cheese melts, about 5-10 minutes depending on your press.

Notes

If you don’t have a panini press, just heat a pan over medium heat, add the sandwich, and weigh down with another pan and a can.

Sometimes comfort doesn’t come from trying something new or exciting. Sometimes it comes from returning to what we already know will ground us. Familiar flavors, familiar places, familiar outings — they help us release pent-up emotions and breathe again. When food becomes more than fuel, it becomes memory, regulation, and care.

Perhaps the snack I’m craving right now isn’t really about hunger. Maybe it’s about comfort, safety, or a moment of peace.
