Butternut Squash Soup: A Fall Essential

Fall is my favorite season, and it’s always felt like home to me.  It’s the season of comfort and coziness.  I love when I start seeing Halloween décor filling store windows, begin smelling pumpkin spice in every coffee shop, and mornings are crisp enough to make me want to grab a sweater and take a long walk.  But more than anything, fall feels like home because of food. 

For some reason, the season makes comfort food taste even better.  I think it’s because of that magical feeling in the air.  Rainy nights call for hearty stews, creamy pastas, or freshly baked desserts like pumpkin pie.  Whenever it’s chilly out, the air draws my tastebuds towards something seasonal and filling—soups especially.  Growing up, fall meant bringing out the slow cooker, heavy stock pots, and casserole dishes.  Fall invites you to slow down, reflect, and take joy in the beauty of the season.  

Personally, I’ve always gravitated toward cozy, carb-filled dishes.  Pasta with heavier sauces such as beef stroganoff, homemade meatloaf with mashed potatoes, or a cheesy chicken and broccoli casserole. But soups? Soups are essential.  They’re versatile, comforting, and delicious.  Whether it’s chicken noodle, tomato with grilled cheese, or something heartier like a beef stew, each bowl carries memories of warmth and moments of stillness. 

One soup that has always felt like fall to me is Butternut Squash soup.  Growing up, the sound of it wasn’t very appealing.  I never tried butternut squash before, and I heard from others that it tasted very sweet (I’m not the biggest fan of sweet savory dishes).  But when I tried this soup years ago, I instantly became a fan.  The flavors scream fall, and it really brings out those seasonal vibes.  It’s easy to make and perfect for those cozy nights that enhance that homey feeling.

Butternut Squash Soup

Creamy, velvety, and slightly sweet, butternut squash soup is the ultimate fall comfort in a bowl. Warm spices, tender squash, and a touch of cream come together to create a dish that’s both nourishing and soul-soothing.
Prep Time 10 minutes
Cook Time 35 minutes
Total Time 45 minutes
Servings: 6 people
Course: Soup

Ingredients
  

  • 2 tbsp extra-virgin olive oil
  • 1 large yellow onion chopped
  • ½ tsp sea salt
  • 1 3lb butternut squash peeled, seeded, and cubed
  • 3 large garlic cloves chopped
  • 1 tbsp fresh sage chopped
  • ½ tsp fresh rosemary minced
  • 3-4 cups chicken broth or vegetable broth
  • 1 tsp fresh ginger grated
  • freshly ground black pepper
For Serving
  • fresh parmigiano reggiano grated, optional
  • drizzle heavy cream optional
  • toasted pepitas optional
  • fresh parsley optional

Equipment

  • 1 Dutch Oven
  • 1 food processor or blender

Method
 

  1. Heat the oil in a large pot over medium heat. Add the onion, salt, and several grinds of fresh pepper and sauté until soft, 5 to 8 minutes. Add the squash and cook until it begins to soften, stirring occasionally, for 8 to 10 minutes.
  2. Add the garlic, sage, rosemary, and ginger. Stir and cook 30 seconds to 1 minute, until fragrant, then add 3 cups of the broth. Bring to a boil, cover, and reduce heat to a simmer. Cook until the squash is tender, 20 to 30 minutes.
  3. Let cool slightly and pour the soup into a blender, working in batches if necessary, and blend until smooth. If your soup is too thick, add up to 1 cup more broth and blend. Season to taste and serve with parmigiana ,parsley, pepitas, a drizzle of heavy cream and crusty bread.
