Cozy Memorial Day Weekend Recipes for a Slow Summer Kickoff

Memorial Day weekend is special because it’s kind of like a kickoff to summer. I know it technically doesn’t start until June, but it’s always felt like summer to me. Going to the beach. Swimming in the pool. Barbecuing. Just being outdoors with loved ones. It’s that special summer feeling.

The smell of sunscreen drifting through the warm air. Lounge chairs soaking up the sun. Ice clinking from the pour of fresh-made lemonade. Someone yelling from the kitchen asking where the mustard is.

As a kid, I was usually the person lingering around the food table, hovering near the adults while everyone else played outside. I liked listening to my family share stories, gossip about what was new within the family, and discovering the recipes that would later become my most nostalgic ones.

I remember one Memorial Day in particular at my aunt’s house. We were barbecuing hamburgers, hot dogs, and BBQ chicken. I was in the kitchen helping my grandma make the sides: potato salad, buttered corn on the cob, and fresh sliced watermelon. After a long day of swimming and playing with my cousins, I was beyond hungry. And honestly, those foods are staples of a good BBQ.

For me, I’ve always loved routine and tradition. So I always enjoyed the predictability of it all. The same foods. Same paper plates. Same bowl of potato salad dusted with paprika.

Now that I’m older, I think I understand why those memories stayed with me so strongly.

When life feels overstimulating or emotionally loud, familiar things can make you feel a little less anxious.

And honestly, this Memorial Day weekend, I really needed that.

I love how simple it all is. I can cook in my comfy clothes and make easy, familiar, comforting recipes. Somehow it all comes together into a meal that feels meaningful.

The Menu

This year’s menu was intentionally simple:

  • BBQ chicken
  • Homemade potato salad
  • Corn on the cob
  • Watermelon slices
  • Lemonade
  • Lemon poppyseed loaf

The Potato Salad I Always Come Back To

Potato salad is one of those recipes that just screams grandma to me. I remember watching her make it, taking in every step, writing down notes, and watching her work her magic with ease. To this day, I still can’t quite make it exactly the way she used to. But somehow, it still tastes like home.

The smell of pickle juice and mustard mixing into the dressing immediately takes me back to standing in warm kitchens before family cookouts, watching someone slice hard-boiled eggs while the my grandpa watched sports in the background.

Ingredients

Potatoes

  • Russet or white potatoes

Dressing

  • Sour cream
  • Mayonnaise
  • Yellow mustard
  • Pickle juice
  • Salt
  • Pepper
  • Paprika

Mix-Ins

  • Chopped green onion
  • Chopped hamburger dill pickles
  • Chopped celery
  • Chopped hard-boiled egg

Garnish

  • Sliced hard-boiled eggs
  • Another sprinkle of paprika on top

I never really measure anything perfectly anymore. I taste as I go, adding extra pickle juice when I want it tangier or more paprika when I want it smokier.

And maybe this is oddly specific, but my favorite part is making it a few hours ahead and pulling it out of the fridge later after everything has chilled together. It always tastes softer somehow. More complete.

Barbara’s Potato Salad

Creamy, tangy, and full of comforting texture, this potato salad is a classic BBQ side dish made with tender russet or white potatoes, chopped hard-boiled eggs, celery, green onion, and dill pickles. It’s tossed in a rich dressing of sour cream, mayonnaise, yellow mustard, and a splash of pickle juice for a bright, slightly briny kick. Finished with a dusting of paprika and topped with sliced eggs,
Course Side Dish

Ingredients
  

  • 2–3 lbs russet or white potatoes
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 2-3 tbsp yellow mustard
  • 2-3 tbsp pickle juice
  • Salt to taste
  • Black pepper to taste
  • Paprika
  • 3-4 hard-boiled eggs chopped
  • 2 celery stalks chopped
  • ¼ cup Hamburger dill pickles chopped
  • Green onion chopped

Instructions
 

  • Peel and chop potatoes into bite-sized pieces.
  • Boil in salted water until fork-tender. Drain and cool slightly.
  • In a large bowl, whisk together sour cream, mayonnaise, mustard, pickle juice, salt, pepper, and paprika.
  • Add potatoes, chopped eggs, celery, pickles, and green onion.
  • Gently fold everything together until coated.
  • Taste and adjust seasoning if needed.
  • Top with sliced hard-boiled eggs and another sprinkle of paprika.
  • Chill before serving for the best flavor.

Notes

Notes: 
  • The pickle juice gives it that classic tangy BBQ flavor.
  • Russet potatoes make it softer and creamier; white potatoes hold their shape more.
  • This tastes even better the next day.

BBQ Chicken & Evening Light

The BBQ chicken was sticky, smoky, and slightly charred around the edges — exactly how summer food should taste.

At one point while the chicken was on the grill, I noticed how golden everything looked in the evening light. One of those quiet little moments you almost miss if you’re distracted.

Someone was inside filling cups with ice.
A neighbor’s dog barked in the distance.
Music was playing low enough that nobody had to talk over it.

For a second, everything felt incredibly still.

And maybe that sounds dramatic for a backyard BBQ, but I think people underestimate how healing ordinary moments can be.

Especially if you spend a lot of your life overstimulated, anxious, emotionally exhausted, or trying to keep up with the pace of everything.

BBQ Chicken

Smoky, sticky, and perfectly charred at the edges, this BBQ chicken is a simple summer classic made for backyard gatherings. Juicy chicken is seasoned and grilled (or baked) until tender, then brushed with a rich barbecue sauce that caramelizes into a slightly sweet, tangy glaze. 
Course Lunch, Main Course

Ingredients
  

Chicken

  • 2-3 lbs bs chicken thighs or drumsticks
  • 1 tbsp olive oil
  • Salt & pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Barbecue Sauce

  • 1 cup barbecue sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp hot sauce optional

Instructions
 

Grill Method

  • Preheat grill to medium heat.
  • Pat chicken dry and coat with olive oil and seasonings.
  • Grill chicken about 25–30 minutes, turning occasionally.
  • During the last 10 minutes, brush generously with BBQ sauce.
  • Continue grilling until slightly charred and cooked through.

Oven Method

  • Bake at 425°F for 35–40 minutes.
  • Brush with sauce during the last 10–15 minutes.
  • Broil briefly for caramelized edges.

Notes

Serve with extra sauce and lots of napkins.

Learning to Enjoy Things Slowly

The best gatherings are the ones where you sit around long after dinner talking about nothing important. When the kitchen gets a little messy. When someone wraps leftovers in foil. And when you’re tired afterward in a satisfying way instead of a depleted one.

This weekend reminded me that comfort doesn’t always come from doing more.

Sometimes it comes from repetition.
Familiar recipes.
Safe foods.
Warm evenings.
The same potato salad you’ve eaten a hundred times before.

And honestly, I think there’s something beautiful about that.
