A Relaxing Sunday for the Soul: Easy Cinnamon Vanilla French Toast

For me, Sundays have always felt like a day of rest—a day to find your balance and strength before the week ahead. I want to spend my time enjoying the small things that bring me peace, not just dwelling on that anticipatory anxiety that Monday tends to bring.
Lately, I’ve realized just how much I need that rest.
I’ve been in a mental marathon for the past few weeks, and it’s been nonstop overthinking and overstressing. Exhaustion doesn’t even begin to describe the emotional turmoil of being stuck in your own head. It leaves you with an ache, an emptiness, and a kind of sorrow that’s hard to describe.
That’s why I’m taking time this Sunday—and the ones after—to fully focus on releasing some of that negative energy. I want to let go of the scattered thoughts and make room for more hopeful ones. Thoughts of growth, change, and reflection. Being able to take a day to sort through what I’m feeling isn’t just helpful. For me, it’s necessary.
The Kind of Sunday I Crave
My ideal Sunday is simple.
It’s sleeping in until whenever I want. Staying in my comfy clothes all day. Sitting in the quiet for a while before my mind starts going haywire. Sometimes, that’s all I really need. I just need time to let the day unfold naturally, without the pressure to be productive or do too much.
What my ideal Sunday looks like:
- Staying in bed longer than usual
- Making a cozy, filling breakfast
- Journaling to get the scattered thoughts out of my brain
- Reading to escape reality for a little while
- Painting outside for a little extra inspiration
- Watching a comfort movie or show to unwind
- Taking a shower, maybe doing a face mask, to feel refreshed
- Making Italian for dinner (a Sunday tradition)
I think when my mind gets loud and overthinking feels inevitable, these moments matter more than ever. They’re what help ground me again. It may not look like much from the outside, but these are the kinds of small rituals that make me feel more connected to myself.
My Typical Sunday Breakfast
French toast always feels especially right for a Sunday morning. Maybe it’s the warmth of the cinnamon, or the way it makes the whole kitchen smell comforting. This version is simple, cozy, and exactly the kind of breakfast I want when I’m trying to ease into the day instead of rushing through it.

For me, part of a slow Sunday always comes back to food. Not in a rushed, grab-whatever-is-easy kind of way, but in the comforting ritual of making something warm, simple, and familiar. Something that makes the house smell good, and something that feels a little extra without being complicated.
Cinnamon Vanilla French Toast
Ingredients
- 4 slices thick bread brioche, challah, or Texas toast work best
- 2 eggs
- ½ cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 tablespoon brown sugar
- 1 tablespoon butter
- Maple syrup for serving
- Powdered sugar optional
- Fresh berries or sliced banana optional
Instructions
- In a shallow bowl, whisk together the eggs, milk, vanilla, cinnamon, and brown sugar until smooth.
- Heat a skillet or pan over medium heat and melt the butter.
- Dip each slice of bread into the mixture, coating both sides but not soaking too long.
- Place the bread on the skillet and cook for about 2–3 minutes per side, or until golden brown.
- Serve warm with maple syrup, a dusting of powdered sugar, and fresh fruit if you’d like.
