Easy Strawberry Poppyseed Salad Recipe for Picnics & Summer Gatherings
Summer is officially here and I’ve been craving the taste of the season.
I’ve been thinking about picnics at the beach, backyard BBQs, a little mini vacation, and all of the things summer calls for.
It’s eating juicy watermelon on the porch while the juice runs down your hands. It’s fresh strawberries from the local farmer’s market. And it’s sitting outside in the sun, soaking up the sounds, the smells, and the flavors that somehow only feel like summer.
The older I get, the more I realize how much life is made up of these ordinary moments that we don’t always notice while they’re happening. And food has a way of helping me notice them.
A tuna salad sandwich at the beach. A backyard BBQ with hamburgers and hot dogs. That first bite of ice cream on a hot day. Fresh corn on the cob covered in butter and salt. The smell of a grill nearby.
These are the things I remember.
Not necessarily because they were big or exciting moments, but because food has a way of attaching itself to our memories. A certain meal can bring you right back to a specific place, a certain summer, or a person you shared it with.
I think that’s part of what I love most about seasonal foods.
They remind us that not everything is available all year long. Some things are meant to be enjoyed while they’re here.
Watermelon tastes different when you know summer won’t last forever. The same goes for peaches, berries, tomatoes, and all the foods that reach their peak this time of year.
For me, summer is found in the tiny joys.
Sometimes it’s eating a fresh salad in the afternoon. Sometimes it’s grabbing an iced coffee before running errands. And sometimes it’s standing in front of the fridge after coming inside from the heat and taking a sip of freshly squeezed, ice-cold lemonade.
It’s those simple things that make the season feel special.
I think that’s why certain recipes stay with us.
I remember when I used to work at Panera Bread, one of their most popular summer dishes was their strawberry poppyseed salad. Since it was only available seasonally, guests would come in from the heat wanting something light and refreshing, and this salad was always a favorite.
At first, I had never tried a salad with strawberries mixed in. Honestly, I thought it sounded a little strange.
Strawberries in a salad?
I wasn’t sure about it.
But because I worked there, I had to try it.
And I couldn’t believe how good it was.
I ended up ordering it for almost every lunch break I took during the summer.
Now I make my own version at home, and every time I do, it brings me right back to those summer days.
The sweetness of the strawberries, the crunch of the almonds, the creaminess of the cheese, and the bright poppyseed dressing all come together in a way that feels like summer in a bowl.
It’s the kind of salad you make for a backyard gathering, a picnic, a quiet lunch at home, or a warm evening when you want something easy but still satisfying.
Summer Strawberry Poppyseed Salad
Ingredients
For the Salad
- 6 cups mixed greens or spinach
- 2 cups fresh strawberries sliced
- 1 cup blueberries
- ½ cup sliced almonds
- ½ cup crumbled feta cheese optional
- ¼ red onion thinly sliced
- 1 cup grilled chicken breast sliced (optional for a heartier meal)
For the Poppyseed Dressing
- ½ cup olive oil
- ¼ cup honey
- ¼ cup apple cider vinegar
- 1 tbs Dijon mustard
- 1 tbs poppy seeds
- pinch of salt and pepper
Instructions
- Add the greens, strawberries, blueberries, almonds, feta cheese, red onion, and chicken (if using) to a large bowl.
- In a small bowl or jar, whisk together olive oil, honey, apple cider vinegar, Dijon mustard, poppy seeds, salt, and pepper.
- Drizzle the dressing over the salad right before serving.
- Toss gently and enjoy.
I love recipes like this because they remind me that sometimes the best meals are the simple ones.
A few fresh ingredients, a little time in the kitchen, and a recipe that brings back a favorite season or memory.
