Nostalgic Poached Egg Toast: Comfort in Every Bite

Food has a special way of unlocking memories. One bite can bring you back to moments of love, care, and calm. Nostalgic dishes don’t just feed us. It grounds us, soothes us, and reminds us of the simple things in life. Cooking them can gently transform even the hardest days.
A food memory I have growing up is when my mom would make me a poached egg on toast. She made it every morning before school. It was my favorite thing to have for breakfast, and I honestly never got sick out of it.
It’s simple—if you have a poached egg maker. I’ve honestly never even tried to boil it. That method seems somewhat complex, but I really do want to test that out. I found a great guide on how to do that here.
There’s something about the buttered wheat toast, and an egg poached to perfection. I love assembling it because I get watch running yolk gently soak into the bread. I tend to mash the egg with a fork and then season with salt and pepper.
A Sensory Hug
Poached on toast was more than a breakfast meal to me. It was comfort, safety, and care. I still often make it, even though it’ll never taste as good as the way my mom did it. I think it’s always difficult to replicate something your mom, or grandma made. They always seem to have that magic touch.
As a neurodivergent child (even though I didn’t have the words for it back then), the world felt too overwhelming. I would have consistent anxiety because of the uncertainty of day-to-day tasks. Making connections was never easy for me, outside of my friend group. But food was a constant. It was always there for me when I feel sad and uncomfortable.
This toast brings fond memories of my mom, and I forever cherish that feeling. I know this is a truly simple meal, and might not be a everyone’s cup of tea, but it means a lot to me. It’s like a soft embrace in sensory form.
How It’s Changed
Now, as an adult, I still crave a poached egg on hard days. I’ve spiced it up a little bit. I now add avocado, arugula salad, and sometimes I’ll add bacon, because why not? I substituted wheat for sourdough, and let me tell you, when it all comes together it’s glorious.
I used to feel silly clinging to such a simple food. But I don’t anymore. I know now that comfort food is not about complexity. It’s about connection. And that connection runs deep.

Nicole’s Jazzed Up Poached Egg on Toast
Ingredients
Method
- Cut the avocado in half, remove the seed and scoop out the out the flesh into a small bowl. Add 1 tsp of lemon zest, the juice from half a lemon, 2 tsp olive oil, salt and pepper and stir and mash with a fork to combine. Leave it a little chunky.
- Toast the bread.
- Spread the avocado mixture evenly on both slices of toast. Top with a mound of baby arugula. Drizzle with olive oil, a little lemon, and salt.
- Add the poached egg on top.
- Sprinkle the egg with salt, pepper, and any other desired seasoning.
- Serve immediately while yolks are still warm.
